Southern Soul Barbeque Brunswick Stew
Ingredients:
1/2 lb. salted butter
3 c. (2 large) finely diced sweet onions
2 Tbsp. minced garlic
1 tsp. cayenne pepper
1 Tbsp. freshly ground black pepper
1 Tbsp. salt
1/4 c. Worcestershire sauce
1/2 c. vinegar barbeque sauce (Southern Soul's Red Red Swine)
1/2 c. brown sweet barbeque sauce (Southern Soul's Sweet Georgia Soul)
1 lb. smoked pulled pork
1/2 lb. smoked pulled chicken
1/2 lb. smoked pulled turkey
1 lb. smoked chopped beef brisket
1 can (#10) crushed tomatoes
1 qt. drained yellow corn kernels
1 qt. drained baby lima beans
1 qt. or more quality chicken stock or broth
Directions: Melt butter in large saucepan over medium heat. Add diced onions and garlic and sauté until onions are translucent, about 15 minutes. Stir in the cayenne pepper, black pepper, salt and Worcestershire sauce. Simmer for 5 minutes then add 1/2 c. of vinegar sauce and 1/2 c. of sweet barbeque sauce. Stir in pulled pork, chicken, turkey, and brisket. Add crushed tomatoes and all vegetables. Stir in chicken stock and let simmer for a couple hours over medium heat. Transfer stew to a serving bowl and serve with warm buttermilk cornbread, if desired.
