Cheesy Spinach Artichoke Cups
Ingredients:
6 oz. cream cheese softened
1/2 box frozen spinach, thawed and excess water squeezed out
1/2 c. marinated artichoke hearts, finely chopped
1/2 c. shredded mozzarella cheese
1/4 c. shredded parmesan cheese
2 cloves garlic, minced
salt and pepper
24 wonton wrappers
Preparation:
Arrange wonton wrappers to line each cup of a lightly oiled standard 12-cup muffin pan then spray lightly with cooking spray. Bake for 5 minutes at 350°F. Take out of the oven and set aside to cool. Place cream cheese, spinach, artichoke hearts, mozzarella cheese, parmesan cheese, garlic, salt and pepper (to taste) in a bowl. Blend until well combined. Divide mixture into wonton cups and bake for another 10 minutes at 350° and serve. **Note: Use two pans or repeat process to make 24 cups. You can also double the amount of wonton wrappers used to make sturdier cups.
