Hot Smoked Salmon with Crab and Vidalia Onion Salad, courtesy of Georgia Sea Grill
2 7-oz.portions of salmon (Atlantic salmon recommended, have cut into 7-oz. portions to fit on planks)
Cedar plank for cooking (prepare as recommended by manufacturer)
For marinade, combine the ingredients listed below and pour over salmon. Marinate for 3-4 hours.
1 Tbsp. brown sugar
2 Tbsp. honey
1 Tbsp. good Bourbon (Makers or Woodford)
1 tsp. olive oil
Salt and pepper to taste
For crab salad, mix together ingredients listed below and refrigerate for one hour:
1 Vidalia onion, thinly sliced
1 tsp. cider vinegar
1 Tbsp. olive oil
1 freshly squeezed lemon
1/2 tsp. Dijon mustard
6 ounces of jumbo lump crab
Salt and pepper to taste
Directions: Place marinated salmon on cedar planks and smoke for approximately thirty minutes. Once salmon is cooked to desired temperature, top with crab salad mixture and serve. Enjoy!
