S’mores Bars
Ingredients:
2 c. all-purpose flour
2 c. graham cracker crumbs
1 tsp. baking powder
1/4 tsp. salt
1 c. unsalted butter, room temperature
1½ c. packed light brown sugar
2 large eggs, beaten
2 c. marshmallow fluff topping
2 c. milk chocolate chips
Preparation:
Preheat oven to 350℉. Line 9 x13” baking pan with foil, leaving a 2” overhang on 2 sides. Spray foil with nonstick spray. In a bowl, whisk together flour, graham cracker crumbs, baking powder and salt. In a separate large bowl, using electric mixer on medium speed, beat butter and sugar until light, about 2 minutes. Beat in eggs until well combined. Reduce mixer speed to low and slowly beat flour mixture into butter mixture. Divide dough in half. Press half into pan until even and flat. Spread marshmallow topping and sprinkle chocolate chips on top. Scatter remaining dough in clumps over top, so marshmallow and chips peek through. Bake until golden brown, 30-35 minutes. Place pan on wire rack to cool completely. Remove from pan, peel off foil and cut into bars. For easier cutting, refrigerate for at least an hour.
