Frozen Lemonade
Ingredients:
1 c. water
3/4 c. sugar
1/2 c. fresh lemon juice
1 large sprig of mint, finely chopped
1 c. lemon flavored vodka
1/4 c. sparkling water
Sprigs of mint for garnish
1 Tbsp. lemon zest, grated for garnish
Directions:
Create a simple syrup by mixing water and sugar in a small saucepan; bring to a boil until sugar dissolves, stirring occasionally. Let cool. Combine simple syrup, lemon juice and chopped mint in a small bowl and mix well. Pour into a sealable freezer bag and freeze for at least 1 hour. To serve, process frozen mixture, vodka and sparkling water in a blender. Pour into four sugar-rimmed martini or margarita glasses and garnish with sprigs of fresh mint and lemon zest.
**Make without the vodka for a family-friendly lemonade.
